I made this really yummy cheesecake that I found on Kalejunkies blog. She has a lot of great recipes if you like to get inspired.
The recipe is simple and the only thing you have to do is to soak the cashews before to get a really creamy texture.
For the crust you need
1,25 dl (1/2cup) almonds
3dl (1 1,2cup) walnuts
1,25 (1/2cup) Dates
0.75 dl (1/4cup) shredded coconut
For the filling
7,5dl (3cups) cashew nuts (soaked for at least 2 hours but preferable longer)
1,25dl (1/2cup) maple syrup
Juice of one lemon
0,75dl (1/4 cup) coconut oil
1tsp vanilla powder
Mix everything in a food processor for the crust and press it out in a baking dish. Put it in the freezer for a while when you make the filling.
Put all the ingredients for the filling and mix in the food processor for a few minutes until its creamy and smooth. Pour it on the crust and in to the freezer again.
On the top I have put a bit of raspberries mixed with maple syrup and a bit of melted chocolate.
I store them in the freezer so it’s easy to just take out whenever its time for a little extra treat (read very often).
If you haven’t tried to make this kind of desert that doesn’t require oven I strongly recommend it cause it’s so easy and quick.
